A cylinder extractor is a tool that grips the lock cylinder and pulls on it hard until it is ripped out or snaps, leaving the lock exposed. The locksmith uses it for openings where the cylinder is beyond repair and the aim is to remove it while leaving the door intact.

The fact that this tool exists explains why it matters so much how your cylinder is fitted. If it sticks out beyond the door or the escutcheon, there is something to grip. Security cylinders have reinforcements against extraction and snapping, and a security escutcheon covers the cylinder so that there is nothing to pull on.

If you look at your door and see that the cylinder protrudes, fitting an escutcheon is one of the improvements that pays off most. See escutcheon installation.
